Okay -- here are some more recipes from my fabulous dinner party, simple and easy:
Chicken with Herbed Goat Cheese

I also made a salad from baby greens topped with pomegranate seeds and sunflower seeds topped with a balsamic vinagrette. Nothing too special, but the colors were wonderful
Lastly, the clincher -- and I can't find the recipe to paste so here it is, again easy:
Apple Crisp with Whipped Cream
Prep time: 20 min
Cook time: 45 min
Filling:
6 Granny Smith apples, peeled, cored, chopped
1/4 c. flour
1/2 c. brown sugar
1 T lemon juice
1/4 c. maple syrup
Topping:
1 c. flour
3/4 c. brown sugar
1/4 t. cinnamon
1/4 t. salt
8 T (1 stick) chilled butter, cut into pieces
1/4 c. coarsely chopped pecans
Whipped Cream:
1 c heavy cream
1/4 c. powdered sugar
Preheat oven to 350 degrees.
For Filling:
Butter a 9 x 13 dish. Mix all filling ingredients together and toss to coat the apples. Pour in prepared baking dish.
For topping:
In a food processor, combine flour, brown sugar, cinnamon & salt in a large bowl. Pulse to blend. Pulse in the butter until mixture forms small lumps. Add pecans and pulse 1 or 2 more times. Sprinkle over filling. Bake for 45 - 50 minutes. Cool 10 minutes before serving.
For Whipped Cream:
Beat until it begins to thicken. While beating, add powdered sugar and beat until soft peaks form.
